The wet chemical cools the burning oil or fat and forms a layer over the surface to reduce the chance of re-ignition.

That combination matters. Extinguishing the visible flame without stopping the heat source can leave the underlying incident unresolved. Likewise, shutting off a gas supply without controlling burning cooking oil does not provide a complete response.

When is a kitchen suppression system needed?

The answer depends on the cooking process, the equipment in use, the canopy arrangement, the building, and the expectations of the insurer. A site with a single low-risk appliance is not the same as a busy restaurant kitchen operating multiple fryers and a chargrill for long service periods.

In practice, fixed suppression is often expected where commercial cooking under extraction presents a significant fire load, especially where deep-fat frying, solid-fuel cooking, high-temperature grilling or extended unattended operation are involved. It may be required by an insurer, identified through a fire risk assessment, requested by a landlord, or specified as part of a wider building fire strategy.

Operators should avoid treating this as a simple box-ticking exercise. A generic system configuration may leave new appliances uncovered after a kitchen refit, while an over-specified design can add avoidable cost and complexity. The objective is suitable coverage for the actual risk, supported by evidence that the design, installation and maintenance are appropriate.

Insurer requirements are often decisive

Insurers rightly focus on commercial kitchens because the losses can extend well beyond the cooking line. Fire, smoke and water damage can close a venue, affect neighbouring units, damage stock and interrupt trading for months. Where cover is subject to particular conditions, those conditions need to be understood before work begins.

This is why specification should consider the insurer’s requirements, recognised standards, the fire risk assessment and the site layout together. If a system needs an interface with gas shut-off, electrical isolation, fire alarms, building management systems or ventilation controls, those connections must be designed and tested as part of the project, not left as an afterthought.

How a suppression system should be specified

The best installation starts with an accurate survey. Appliance dimensions, fuel types, cooking processes, canopy dimensions, duct arrangements and access constraints all influence the design. A change as small as replacing a standard range with a larger chargrill can affect nozzle positioning and system coverage.

A competent survey should establish what is installed now, what is planned for the near future, and how the kitchen operates during service. It should also identify whether work must take place overnight, before opening or during a planned closure. For most hospitality businesses, minimising disruption is not a preference. There are four practical questions every operator should ask before approving a proposal:

  • Which appliances, canopy areas and plenum sections will the system protect?

  • Which services will be shut down on activation, and who is responsible for each interface?
  • What testing, commissioning, documentation and maintenance support are included after installation?

Clear answers prevent a common problem: assuming that a suppression system is fully operational when only the cylinder and pipework have been fitted. The completed system must be commissioned, interfaces proven, staff briefed and records provided.

Installation without unnecessary downtime

A kitchen suppression installation involves more than mounting a cylinder and running pipework. Equipment needs to be positioned securely, nozzles must be aligned and protected from damage, detection must be correctly installed, and every connection must work as intended. The finished result should be tidy, accessible for service and compatible with the operation of the kitchen.

Timing also needs careful management. Many kitchens cannot lose a full trading day, particularly during peak periods. A specialist contractor should plan installation around opening hours where practical, coordinate with gas and electrical contractors, and agree access requirements in advance. This reduces last-minute decisions that can delay commissioning or leave interfaces incomplete.

The trade-off is that out-of-hours work needs a realistic programme. It should never mean rushing system design, skipping testing or leaving a site without the agreed protection in place. Good planning provides both speed and control.

Maintenance keeps protection dependable

A fixed suppression system is not fit-and-forget equipment. It requires periodic inspection and maintenance by competent technicians, alongside routine checks by the site team. Grease, accidental knocks, equipment movement and kitchen alterations can all affect its condition and performance.

Maintenance visits typically check the condition of detection and discharge components, cylinder pressure or weight where applicable, actuation mechanisms, nozzle caps, pipework, signage and system interfaces. The precise service requirements depend on the system type and manufacturer instructions, but the principle is constant: a system that has not been maintained cannot be assumed to operate as designed.

Kitchen managers should also make suppression checks part of everyday operational discipline. Nozzles should not be blocked by stored items or covered in grease. Appliances should not be moved beneath a canopy without reviewing the system layout. Any activation, discharge, accidental damage or major change to cooking equipment should trigger an immediate call to the maintenance provider.

Extraction cleaning and suppression work together

Suppression and extraction cleaning address related but different risks. A suppression system controls a fire at the cooking hazard. Regular professional cleaning removes grease deposits that can fuel fire spread through the canopy and ductwork.

One does not make the other optional. A kitchen with a well-maintained suppression system can still present a serious risk if extraction hygiene is poor. Equally, a clean canopy does not provide automatic extinguishing or fuel isolation when a fryer fire develops. Both controls should sit within a wider fire safety plan that includes suitable extinguishers, staff procedures, equipment maintenance and a current fire risk assessment.
