Do Commercial Kitchens Need Suppression Systems?

A fryer flare-up can move from the cooking appliance into the canopy and extraction duct before a member of staff can safely reach an extinguisher. Do Commercial Kitchens Need Suppression?

Not every commercial kitchen is subject to a blanket legal rule requiring a fixed suppression system. A low-risk preparation kitchen using only microwaves, reheating equipment or electric ovens may have a very different risk profile from a busy restaurant line with deep-fat fryers, griddles, chargrills and a long extraction duct run.

However, the responsible person must identify fire hazards and provide appropriate fire precautions through a suitable and sufficient fire risk assessment. Where cooking creates a foreseeable risk of rapid fire spread through a canopy or ductwork, portable extinguishers alone may not provide adequate protection. A fixed system is commonly the proportionate control measure.

Insurers also frequently set their own requirements. A commercial kitchen fire does not behave like a small waste-bin fire. Cooking oils and fats burn at high temperatures, and applying the wrong extinguishing medium can make the situation worse. Water on burning oil, for example, can cause violent splashing and spread the fire beyond the appliance.

The greater concern is often the route above the appliance. Grease deposits inside a canopy, plenum and extraction duct can provide a path for flames to travel away from the cooking line. Once fire enters concealed ductwork, it can become difficult to access, difficult to extinguish and capable of causing significant damage well beyond the kitchen.

The cooking line is only part of the risk

Deep-fat fryers are an obvious concern, but they are not the only appliances that need consideration. Griddles, ranges, woks, chargrills and specialist cooking equipment can all produce flames, hot oils and grease-laden vapours. Solid-fuel appliances bring additional risks from embers, intense heat and deposits within extraction systems.

The layout matters as much as the appliance type. A compact cooking battery under a shared canopy, for example, may require carefully positioned nozzles so that each protected hazard receives the correct discharge. Adding, moving or replacing equipment can affect the system design and should never be treated as a simple kitchen refit.

The system must act when people cannot

Staff training and the correct portable extinguishers remain necessary, but they rely on somebody recognising the fire, approaching it safely and using the equipment correctly. For a commercial kitchen, this means the fire risk assessment should consider the type and volume of cooking, the presence of oil and grease, the condition and cleaning regime of extraction systems, escape routes, the building’s construction and the potential effect of a fire on neighbouring occupiers.

A generic assessment that records ‘fire extinguishers provided’ without addressing the cooking process is unlikely to reflect the real risk. Where the assessment identifies a need for fixed suppression, the system should be designed for the actual appliances beneath the canopy, not selected from a standard package.

Third-party certification and insurer approval are also material. Decision-makers should be able to show that the system selected is suitable for the application, installed competently and supported by documented maintenance. When Fixed Suppression Is Usually Expected

A fixed system is commonly expected where there are multiple high-risk cooking appliances under extraction, regular deep-fat frying, chargrilling, wok cooking or solid-fuel equipment. There are trade-offs. A fixed system is an investment and requires periodic maintenance, while a poorly designed installation can complicate a future appliance change. Those are reasons to specify the system properly, not reasons to avoid it. The cost of an avoidable fire can include closure, lost stock, extraction replacement, lost bookings, reputational damage and increased insurance costs.

What a Proper Kitchen Suppression System Does

Most commercial kitchen systems use a wet chemical agent developed for cooking-oil fires. When activated, the agent is discharged through fixed nozzles at the cooking appliances and within the canopy area. It cools the burning surface and creates a layer that helps prevent vapours from feeding the fire.

Detection can be automatic, with manual activation available as an additional safeguard. The system should be configured to interface with the kitchen equipment, shutting off gas and, where applicable, electrical supplies to the protected cooking line. It may also need to interface with fire alarm and building management systems, depending on the site requirements.

The quality of this integration is not a detail. A suppression system that discharges but does not isolate the source of heat may not deliver the intended level of protection. Installation Must Work Around Service, Not Against It

For a trading venue, the installation programme matters. Work above a live cooking line needs careful planning, site coordination and a clear understanding of when equipment can be taken out of use. In many cases, installation can be scheduled around quieter periods or closed hours to minimise lost trading time.

Before work begins, the provider should establish the exact appliance list, canopy dimensions, extraction arrangement, fuel supplies and existing fire safety interfaces. This avoids late changes, inaccurate quotations and protection gaps. If the kitchen configuration changes after the survey, the design should be reviewed before the system is installed or recommissioned.
